The difference between Lincoln Longwool lamb and the lamb bought in the supermarket is simply ‘taste’. Unlike their commercial cousins, Lincoln Longwool lambs take longer to mature which ultimately means a far superior product for the consumer. A slow-grown approach results in a lean product with just enough fat evenly distributed.
A hogget or hogg is a sheep between 12 and 24 months old. Technically too old to be classed as lamb but with the same qualities and with the added bonus that it comes in larger portions. Lincolns produce top-quality hogget carcasses.
Lincoln Longwools were always natural mutton producers as they are large framed with plenty of substance. Lincoln mutton was a staple of the British diet pre and post war. Mutton fell out of fashion due to the increasing import of lamb from New Zealand but producers have noticed an increased demand recently as its depth of flavour is increasingly appreciated.
